Ang Kor Nga Piah aka Mooncake biscuits
I have never thought I would venture into mooncakes. We used to order mooncakes from my aunt or buy from Foshan ... the square or round shaped with fillings inside and buy ang kor nga piah (AKNP) from the shop at Jalan Nordin. Pretty expensive. One box of 4 mooncakes can easily cost RM40 to RM60. A packet of ang kor nga pia (less than 10 pieces, I am sure) cost about RM4 - RM6 depends on the filling.
A colleague made AKNP and gave me some the other day. It was good. She told me to give it a try as it is super easy.
This is my first batch of AKNP. I am hooked! Going to make more soon : ) after I give macaroons a try.
Note: The lady whom I bought the golden syrup from offered to give me her recipe if I fail.
Recipe:
450g golden syrup
600g rose flour (sifted)
170g oil ( I used canola oil)
1 tsp alkaline water
1 tsp bicarbonate soda
0.75g baking powder
Mix golden syrup + oil + alkaline water together (A)
Mix all the dry ingredients together (B)
Add A into B and mix well. Let it rest for 5 hours.
Shape dough into 20g ball and add in fillings .... I used red bean paste 15g for each 20g dough.
Glaze with eggs
Bake for 15mins @ 180C
